First course:
Seared Line Caught MD Rockfish, Smoked Eggplant "Babaganoush", Wild Black Rice Salad, Green Olive Puree paired with TN Chardonnay

 

Second course:
Quail Stuffed with Golden Raisins, Currants, Brioche and Braised Pheasant, Sweet Potato Puree, Cider Gastrique paired with TN Chambourcin/Syrah Rose

 

Third course:
Coriander and Lime Grilled Venison Flank Steak over Venison Sausage and Pepperjack Stuffed Sweet Peppers, Dried Chile and Pepita Mole and Red Rice and Beans paired with TN 2014 Cab Franc

 

Fourth course:
Braised Bison Short Ribs with Celeriac and Parsnips, Slow Roasted Carrots paired with TN 2015 Cab Franc

 

Dessert:
Dark Chocolate Pot de Cremes, Wild Blueberry Compote, Almond Toffee, Whipped Cream paired with TN Chambourcin Port Style.
